Human-Centricity, Digitization, AI, and the Brewing Industry - Current Projects and Trends

Abstract

While digitization techniques in all branches of industry along with various AI related enhancements are in the focus of application and research, a central paradigm of industry 5.0 relates to the so-called human-centric approach, being the technology serving the human rather than the human being the technology's slave. It is not hard to guess, that an adequate execution of the aforementioned in real applications demand a well-educated work force in the relevant field. This paper aims to combine findings from the technological, user, and pedagogic perspective applied to the brewing industry.
In the recent past a generic review on the impact of AI in the brewing industry has been published, while an actual implementation of a human-centric digitization approach in a local brewery is currently being installed, following the pedagogic and industry 5.0 related approach carried out in the currently running ERASMUS+ LEONARDO project. A perfect example of an applied human-centric brewing approach has as well been carried out recently, including the customer's perception and acceptance in designing "the perfect beer".
The result of this scientific summary and presentation will combine the gathered information from the given sources, covering the fields described above.
